While the final lineup of cocktails is still being honed, Johnson’s list includes options like the mildly bubble gum flavored Bubble Rum (extra dry rum, bubble gum syrup, lemon sherbet, suze bitters, and hopped grapefruit bitters) and the New Gimlet featuring a floating nasturtium leaf loaded with finger lime “caviar.” Williams, who favors gin, has also made certain the cocktails included an gin martini. Wang notes that the bar will also serve a Ramona canned wine spritzer made by Momofuku restaurant group alum Jordan Salcito and a Billecarte-Salmon Brut Rosé by the bottle. It features two draft beers, a single draft cocktail, four canned beers, and nine wines by the glass. Williams and Wang collaborated with a team that included bartender Marlowe Johnson and Lady of the House’s Christian Stachel to help develop the bar menu. It’s like familiar flavors but sort of done in a different way.” Williams plans to offer bar snacks at the lounge including spiced nuts, potato chips, and olives as well as a rotating candy bar starting with a seasalt butterfinger. ![]() “But I think for Candy Bar’s cocktails and snacks, very classic but exciting, which is kind of the way I described how I like to cook. “ a very feminine space but powerful, which is sort of the identity of Lady of the House to me,” she says. “The most painful part was that the painting process then takes five days,” Heckman says, acknowledging that the end result was worth the trouble.įor Kate Williams (who along with her business partner Matt Wang is spearheading several projects including Karl’s at the Siren Hotel), ASH’s vision for Candy Bar fit well with her personal approach to hospitality. “The ceiling structure to hold was designed for 400 pounds,” Heckman recalls, “but lo and behold, we get it to Detroit and it weighs in at 1,500 pounds.” Candy Bar’s painstakingly finished ceiling had to be ripped apart and reinforced to handle the additional weight. The chandelier was purchased in Paris and weighed in at 400 kilos - a metric conversion that was unfortunately overlooked during the process of building Candy Bar. The multi-tiered piece features 670 individual pieces of glass and proved a particular challenge to install. One of Candy Bar’s more striking elements is the hulking glass chandelier that looms over the curved marble bar top. The walls are coated with a lustrous, “Jayne Mansfield pink” auto paint, according to Matt Wang.Ĭandy Bar’s Bubble Rum. A large, sparkling 1970s disco ball came from a nightclub in Paris. The sconces are from Italy circa the 1950s and assorted decorations on the back bar are from the 1980s. The booths and wall design, for example, are influenced by the decor from old Hollywood celebrity hangout Perino’s. ![]() “I think a lot of that has to do with creating a space that’s transporting and a little bit of a fantasy and a little bit romantic and a little bit mysterious,” he says.ĪSH’s team looked to iconic venues from different eras for inspiration. “It was was born from the notion of trying to create what we consider to be an iconic hotel bar.” ASH CEO Ari Heckman says of the design process for Candy Bar. A collaboration between ASH NYC, Lady of the House chef Kate Williams, and partner Matt Wang, Candy Bar adds a touch of elegance to the Siren’s lobby. The hotel lobby cocktail lounge Candy Bar is among the first spaces set to open to the public very soon at the Siren. Once completed, it will feature a host of new bars, restaurants, cafes, and shops as well as rooms with some stunning views of the city. While ASH NYC is still waiting on that free coffee, the Siren Hotel is quickly evolving into one of the more intriguing ventures in Detroit. The task of shoring up the crumbling structure eventually fell to development group ASH NYC, who took over the Wurlitzer nearly four and half years ago with the goal of preserving the building as a boutique hotel. The once elegant tower had fallen into disrepair, notoriously sending pieces of its worn facade crashing into the neighboring building and People Mover tracks. It wasn’t too long ago that there was a sign on Broadway in downtown Detroit offering free coffee in exchange for purchase of the Wurlitzer Building. ![]()
